I haven't but am considering it. I think the main issue with doing so is - from what I've read - there aren't reliable ways to jailbreak latest firmware. Thought it would be cool to download the NES emulator for the Touch, I'm really happy with the functionality that's available. In June, the AppStore will be coming to iTunes. There will be free applications, as well as pay applications available then which should expand the functionality far beyond the most recent software update - hopefully. I'm looking forward to getting a decent game or two for the Touch.

Jailbreaking is the term used for hacking the Touch to allow it to use homebrew software not condoned by Apple. Currently, non-jailbroken iPhone/iPod Touch firmware allows access only to the applications available via
Apple - Web apps - All Categories. I don't really want to void the warranty, so I think I'll keep mine as-is for now.
